Creamy Chicken and Tarragon on Sunflower and Chia Crackers - so simple and easy to make

This creamy chicken with tarragon tastes so good on our crackers and makes a great lunch or perfect as a canapé topping  

1 medium chicken, 150ml mayonnaise (preferably homemade), 75 ml Double cream, 1 teaspoon of Fresh or Dry Tarragon, 3 spring onions.

Remove the skin from the chicken and slice into pieces, season with salt and pepper.

In a separate bowl, mix the mayonnaise thoroughly with the cream, adding the chopped tarragon and finely chopped spring onions.

Now pour the sauce over the chicken, mix it well so that all the chicken pieces get a good coating, then scoop onto our Teff Crackers or top them as a canapé.  We think that an asparagus spear decorates them well
